Chef Carlos Hernandez grew up in his abuela Rosa's kitchen in Oaxaca, where mole simmered for three days and tortillas were pressed by hand before sunrise. Every dish carried a story. Every flavor held a memory.
After years in Mexico City's street food scene and top kitchens in New York, Carlos opened El Fuego with one mission: bring the soul of those recipes to the streets, reimagined with fearless creativity and uncompromising ingredients.
The 28-ingredient mole? That's abuela's. The birria consomme? Three generations deep. The habanero margarita? That's all Carlos.
